Ingredients

  • 6 breakfast sausages
  • 4 medium potatoes, diced
  • 4 eggs
  • 4 slices bread, toasted
  • 1 tbsp olive oil
  • 1 tbsp butter
  • Salt and black pepper
  • 1 tbsp fresh parsley, chopped

Creamy Mustard Sauce

  • 3 tbsp mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tsp whole grain mustard
  • 1 tsp lemon juice
  • 1 tbsp heavy cream

Instructions

  1. Preheat a skillet over medium heat.
  2. Cook the sausages for 10–12 minutes, turning occasionally until golden brown and fully cooked.
  3. Toss the diced potatoes with olive oil, salt, and pepper. Cook in a skillet for 15–18 minutes until crispy and golden.
  4. Toast the bread slices and lightly butter them.
  5. Fry the eggs until the whites are set and the yolks remain slightly runny.
  6. In a small bowl, whisk together mayonnaise, Dijon mustard, whole grain mustard, lemon juice, and cream until smooth.
