Ingredients
For the Tigrés
- 1 cup (100 g) almond flour
- 1/2 cup (60 g) all-purpose flour
- 1/2 cup (100 g) granulated sugar
- 1/2 teaspoon baking powder
- 4 egg whites
- 1/2 cup (115 g) melted butter
- 1 teaspoon vanilla extract
- 1/2 cup (90 g) mini chocolate chips
For the Ganache
- 150 g dark chocolate, finely chopped
- 2/3 cup (160 ml) heavy cream
Instructions
Step 1
Preheat the oven to 350°F (175°C). Grease a mini bundt or tigré mold.
Step 2
In a large bowl, whisk together almond flour, flour, sugar, and baking powder.

Add the egg whites, melted butter, and vanilla extract. Mix until smooth.
Step 4
Fold in the chocolate chips.
Step 5
Fill each mold about three-quarters full.

Bake for 12–15 minutes until lightly golden and a toothpick inserted comes out clean.

Allow the cakes to cool completely before removing them from the molds.
Prepare the Ganache

Heat the heavy cream until just simmering.

Pour the hot cream over the chopped chocolate and let sit for 2 minutes.

Stir until smooth and glossy.

Spoon the ganache into the center cavity of each cooled tigré.

Let the ganache set for 20–30 minutes before serving.
