Ingredients

For the Beef Tips & Gravy

  • 2 lbs (900 g) beef stew meat or sirloin tips
  • 2 tbsp olive oil
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 2 tbsp all-purpose flour
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp onion powder
  • Salt and black pepper to taste
  • Fresh parsley for garnish

For the Cauliflower Mash

  • 1 large head cauliflower, cut into florets
  • 2 tbsp butter
  • 1/4 cup cream cheese
  • 2 tbsp heavy cream
  • Salt and pepper to taste

Instructions

Step 1: Prepare the Cauliflower Mash

  1. Bring a large pot of water to a boil.
  2. Add cauliflower florets and cook for 10–12 minutes until very tender.
  3. Drain thoroughly.
  4. Transfer to a food processor.
  5. Add butter, cream cheese, heavy cream, salt, and pepper.
  6. Blend until smooth and creamy.
  7. Keep warm.

Step 2: Cook the Beef Tips

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season beef with salt and pepper.
  3. Brown the beef on all sides for 5–6 minutes.
  4. Remove and set aside.

Step 3: Make the Gravy

  1. In the same skillet, cook onion until softened.
  2. Add garlic and cook for 30 seconds.
  3. Sprinkle in flour and stir for 1 minute.
