Ultimate Quesadilla with Creamy Queso

Ingredients

Quesadillas

  • 4 large flour tortillas
  • 2 cups cooked chicken, shredded
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 red bell pepper, diced
  • 1 small onion, diced
  • 1 tbsp olive oil
  • 1 tsp paprika
  • ½ tsp garlic powder
  • Salt and pepper to taste

Queso Dip

  • 2 tbsp butter
  • 2 tbsp flour
  • 1 cup milk
  • 2 cups cheddar cheese, shredded
  • 1 small jalapeño, finely diced
  • Salt to taste

Instructions

  1. Heat olive oil in a skillet and sauté onion and bell pepper until softened.
  2. Add chicken, paprika, garlic powder, salt, and pepper. Cook for 2 minutes.
  3. Place a tortilla in a skillet over medium heat.
  4. Sprinkle cheese, add chicken mixture, and top with more cheese.
  5. Fold the tortilla and cook until golden and crispy on both sides.
  6. Repeat with remaining tortillas.

Queso Dip

  1. Melt butter in a saucepan.
  2. Whisk in flour and cook for 1 minute.
  3. Slowly add milk while whisking.
  4. Stir until thickened.
  5. Add cheddar cheese and jalapeño.
  6. Stir until smooth and creamy.

Serve warm with salsa, guacamole, and the queso dip.
