Quesadillas
- 4 large flour tortillas
- 2 cups cooked chicken, shredded
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 red bell pepper, diced
- 1 small onion, diced
- 1 tbsp olive oil
- 1 tsp paprika
- ½ tsp garlic powder
- Salt and pepper to taste
Queso Dip
- 2 tbsp butter
- 2 tbsp flour
- 1 cup milk
- 2 cups cheddar cheese, shredded
- 1 small jalapeño, finely diced
- Salt to taste
Instructions
- Heat olive oil in a skillet and sauté onion and bell pepper until softened.
- Add chicken, paprika, garlic powder, salt, and pepper. Cook for 2 minutes.
- Place a tortilla in a skillet over medium heat.
- Sprinkle cheese, add chicken mixture, and top with more cheese.
