Vegan Marry Me Chickpeas

Ingredients

  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 small onion, diced
  • 1 can (540 ml) chickpeas, drained and rinsed
  • ½ cup sun-dried tomatoes, chopped
  • 1 cup coconut cream
  • 1 cup vegetable broth
  • 2 cups baby spinach
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • Salt and black pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Sauté onion for 3–4 minutes until softened.
  3. Add garlic and cook for 30 seconds.
  4. Stir in chickpeas and sun-dried tomatoes.
  5. Pour in vegetable broth and coconut cream.
  6. Add Italian seasoning, paprika, salt, and pepper.
  7. Simmer for 10–12 minutes until creamy.
  8. Stir in spinach and cook until wilted.
  9. Garnish with fresh basil.
  10. Serve with crusty bread, rice, or pasta.
