- 2 tbsp olive oil
- 4 garlic cloves, minced
- 1 small onion, diced
- 1 can (540 ml) chickpeas, drained and rinsed
- ½ cup sun-dried tomatoes, chopped
- 1 cup coconut cream
- 1 cup vegetable broth
- 2 cups baby spinach
- 1 tsp Italian seasoning
- ½ tsp paprika
- Salt and black pepper to taste
- Fresh basil for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Sauté onion for 3–4 minutes until softened.
- Add garlic and cook for 30 seconds.
- Stir in chickpeas and sun-dried tomatoes.
- Pour in vegetable broth and coconut cream.
- Add Italian seasoning, paprika, salt, and pepper.
- Simmer for 10–12 minutes until creamy.
- Stir in spinach and cook until wilted.
- Garnish with fresh basil.
- Serve with crusty bread, rice, or pasta.
