Golden, crunchy, and packed with tropical flavor, these Air Fryer Coconut Shrimp are coated in crispy toasted coconut and cooked to perfection without deep frying. Juicy on the inside and irresistibly crispy on the outside, they’re perfect as an appetizer, snack, or light dinner with your favorite dipping sauce.
Ingredients
- 500 g large shrimp, peeled and deveined
- ½ cup all-purpose flour
- 2 eggs, beaten
- 1 cup shredded coconut
- ½ cup panko breadcrumbs
- 1 tsp garlic powder
- ½ tsp paprika
- Salt and pepper to taste
- Cooking spray
Instructions
- Pat the shrimp dry with paper towels.
- Season with salt, pepper, garlic powder, and paprika.
- Place flour in one bowl, beaten eggs in another, and mix coconut with panko in a third bowl.
- Coat each shrimp in flour, then egg, then the coconut mixture.
- Arrange in the air fryer basket in a single layer.
- Lightly spray with cooking oil.
- Air fry at 390°F (200°C) for 8–10 minutes, turning halfway through cooking.
- Serve immediately with sweet chili sauce or a creamy coconut dip.
Coconut Dipping Sauce
- ¼ cup coconut milk
- 2 tbsp sweet chili sauce
- 1 tsp lime juice
Mix all ingredients and serve alongside the shrimp.
