Ingredients
1 cup water
2 tbsp sugar
1/2 tsp salt
2 tbsp unsalted butter
1 cup all-purpose flour
1 egg
1 tsp vanilla extract
Oil for frying
Cinnamon Sugar Coating
1/2 cup sugar
1 tsp ground cinnamon
Instructions
In a saucepan, combine water, sugar, salt, and butter. Bring to a boil.
Reduce heat and add the flour all at once. Stir vigorously until a smooth dough forms.
Remove from heat and let cool for 5 minutes.
Mix in the egg and vanilla until smooth.
Transfer the dough to a piping bag fitted with a star tip.
Heat oil to 350°F (175°C).
Pipe strips of dough into the hot oil and cut with scissors.
Fry until golden brown, about 2–3 minutes per side.
Drain on paper towels.
Mix sugar and cinnamon in a bowl, then roll warm churros in the mixture.
