Ingredients

1 cup (185 g) quinoa, rinsed
2 cups (480 ml) water
2 cups baby spinach
1 cup strawberries, sliced
1 cup blueberries
1 orange, peeled and segmented
1 avocado, diced
½ cup pomegranate seeds
½ cup feta cheese, crumbled
⅓ cup hazelnuts, chopped
Fresh mint leaves
Honey Citrus Dressing
3 tbsp olive oil
2 tbsp fresh orange juice
1 tbsp lemon juice
1 tbsp honey
Salt and black pepper to taste
Instructions
Rinse the quinoa thoroughly.
In a saucepan, bring the water to a boil and add the quinoa.
Reduce heat, cover, and simmer for 15 minutes until the water is absorbed.
Let the quinoa cool completely.
In a large serving bowl, add the spinach and cooked quinoa.
Arrange the strawberries, blueberries, orange segments, avocado, and pomegranate seeds on top.
Sprinkle with feta cheese and chopped hazelnuts.
Whisk together the olive oil, orange juice, lemon juice, honey, salt, and pepper.
Drizzle the dressing over the salad.
Garnish with fresh mint leaves and serve immediately.
