Crust
250 g (9 oz) chocolate cookies, crushed
100 g (7 tbsp) melted butter
Cheesecake Filling
600 g (21 oz) cream cheese, softened
200 ml (¾ cup) heavy cream
150 g (¾ cup) sugar
3 eggs
1 tsp vanilla extract
1 tbsp cornstarch
Cherry Topping
400 g (14 oz) cherries (fresh or frozen)
100 g (½ cup) sugar
2 tbsp lemon juice
1 tbsp cornstarch
2 tbsp water
Decoration
Whipped cream
Fresh cherries
Chocolate shavings (optional)
Instructions
Preheat oven to 160°C (320°F).
Mix crushed cookies with melted butter and press into a springform pan.
Bake for 10 minutes and let cool.
Beat cream cheese and sugar until smooth.
Add eggs one at a time, then vanilla, cream, and cornstarch.
Pour over the crust and bake for 50–60 minutes.
Cool completely, then refrigerate for at least 4 hours.
For the topping, cook cherries, sugar, and lemon juice for 5 minutes.
Mix cornstarch with water and stir into the cherries until thick and glossy.
Let cool and spread over the cheesecake.
Decorate with whipped cream, fresh cherries, and chocolate shavings.
