Ingredients

For the Coffee Layer:
  • 2 cups strong espresso or brewed coffee cooled
  • 1 teaspoon vanilla extract optional
For the Pistachio Cream:
  • 16 oz mascarpone cheese (450 g), softened
  • 1 cup heavy whipping cream cold
  • ¾ cup powdered sugar
  • 1 cup pistachio cream
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon salt
For Assembly:
  • 24–30 ladyfingers Savoiardi
  • ½ cup chopped roasted pistachios
  • Unsweetened cocoa powder for dusting (optional)

Method

  1. Brew the espresso or strong coffee and allow it to cool completely.
  2. In a large bowl, beat the mascarpone, pistachio cream, powdered sugar, vanilla extract, and salt until smooth and creamy.
  3. In a separate bowl, whip the heavy cream to medium-stiff peaks.
  4. Gently fold the whipped cream into the mascarpone mixture until light and fully combined.
  5. Quickly dip each ladyfinger into the cooled espresso for 1–2 seconds.
  6. Arrange a single layer of soaked ladyfingers in the bottom of a 9×13-inch dish.
  7. Spread half of the pistachio mascarpone mixture evenly over the ladyfingers.
  8. Sprinkle with a portion of the chopped pistachios.
  9. Repeat with another layer of dipped ladyfingers, followed by the remaining pistachio cream.
  10. Smooth the top with a spatula.
  11. Cover and refrigerate for at least 6 hours, preferably overnight.
  12. Just before serving, dust lightly with cocoa powder and garnish generously with chopped pistachios.
