ROASTED SWEET POTATO BITES WITH BLUE CHEESE, WALNUTS AND HOT HONEY GLAZE

Ingredients

  • 2 large sweet potatoes, peeled and cut into cubes
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and black pepper to taste
  • 1/2 cup crumbled blue cheese
  • 1/3 cup chopped walnuts
  • Fresh thyme leaves
  • 3 tbsp hot honey (or regular honey)

Instructions

  1. Preheat oven to 425Β°F (220Β°C).
  2. Toss sweet potato cubes with olive oil, garlic powder, paprika, salt, and pepper.
  3. Spread on a baking sheet and roast for 25–30 minutes until golden and caramelized.
  4. Transfer to a serving platter.
  5. Top with crumbled blue cheese and walnuts.
  6. Drizzle generously with hot honey.
