This homemade Chinese Chicken Soup is loaded with juicy chicken, fresh vegetables, and a rich, flavorful broth infused with ginger and garlic. Light yet satisfying, it’s an easy comfort food recipe that’s perfect for lunch or dinner.
Ingredients (Serves 6)
For the Soup
- 2 chicken breasts, cooked and shredded
- 6 cups chicken broth
- 1 cup mushrooms, sliced
- 1 carrot, julienned
- 1 cup bamboo shoots, sliced
- 2 eggs, lightly beaten
- 3 green onions, sliced
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp fresh ginger, grated
- 2 cloves garlic, minced
To Thicken the Soup
- 3 tbsp cornstarch
- ¼ cup cold water
Seasoning
- 1 tsp white pepper
- ½ tsp salt (or to taste)
- 1 tbsp rice vinegar (optional)
Garnish
- Green onions
- Fresh cilantro
- Sesame seeds (optional)
Instructions
- Bring the chicken broth to a gentle boil.
- Add mushrooms, carrots, bamboo shoots, garlic, and ginger. Simmer for 10 minutes.
- Stir in the shredded chicken, soy sauce, sesame oil, salt, and white pepper.
- Mix cornstarch with cold water and slowly pour into the soup while stirring.
- Slowly drizzle in the beaten eggs, stirring gently to create egg ribbons.
- Simmer for 2–3 minutes.
- Garnish with green onions and cilantro before serving.
