Ultimate Chinese Chicken Soup

This homemade Chinese Chicken Soup is loaded with juicy chicken, fresh vegetables, and a rich, flavorful broth infused with ginger and garlic. Light yet satisfying, it’s an easy comfort food recipe that’s perfect for lunch or dinner.

Ingredients (Serves 6)

For the Soup

  • 2 chicken breasts, cooked and shredded
  • 6 cups chicken broth
  • 1 cup mushrooms, sliced
  • 1 carrot, julienned
  • 1 cup bamboo shoots, sliced
  • 2 eggs, lightly beaten
  • 3 green onions, sliced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp fresh ginger, grated
  • 2 cloves garlic, minced

To Thicken the Soup

  • 3 tbsp cornstarch
  • ¼ cup cold water

Seasoning

  • 1 tsp white pepper
  • ½ tsp salt (or to taste)
  • 1 tbsp rice vinegar (optional)

Garnish

  • Green onions
  • Fresh cilantro
  • Sesame seeds (optional)

Instructions

  1. Bring the chicken broth to a gentle boil.
  2. Add mushrooms, carrots, bamboo shoots, garlic, and ginger. Simmer for 10 minutes.
  3. Stir in the shredded chicken, soy sauce, sesame oil, salt, and white pepper.
  4. Mix cornstarch with cold water and slowly pour into the soup while stirring.
  5. Slowly drizzle in the beaten eggs, stirring gently to create egg ribbons.
  6. Simmer for 2–3 minutes.
  7. Garnish with green onions and cilantro before serving.
