Chipotle Mushroom Mexican Bowl

Bold, smoky, and packed with flavor, this Chipotle Mushroom Mexican Bowl is a delicious plant-based dish inspired by authentic Mexican flavors. Tender mushrooms are sautรฉed in a rich chipotle sauce and finished with a squeeze of fresh lime for the perfect balance of smoky, spicy, and tangy notes.


Ingredients
For the Mushrooms
500 g (1 lb) cremini or button mushrooms, sliced
1 tbsp olive oil
1 small onion, sliced
3 garlic cloves, minced
Chipotle Sauce
2 chipotle peppers in adobo sauce, finely chopped
2 tbsp adobo sauce
2 tbsp tomato paste
ยฝ cup vegetable broth
1 tbsp soy sauce
1 tsp smoked paprika
1 tsp cumin
1 tsp honey or maple syrup
Salt and black pepper to taste
Garnish
Fresh cilantro
Lime wedges
Avocado slices
Tortillas or rice for serving

Instructions
Step 1
Heat olive oil in a large skillet over medium-high heat.
Step 2
Add onions and cook for 3โ€“4 minutes until softened.
Step 3
Add garlic and cook for 30 seconds until fragrant.
Step 4
Add mushrooms and cook for 8โ€“10 minutes until golden brown and most of the liquid has evaporated.
Step 5
Mix in the chipotle peppers, adobo sauce, tomato paste, vegetable broth, soy sauce, paprika, cumin, honey, salt, and pepper.
Step 6
Simmer for 5โ€“7 minutes until the sauce thickens and coats the mushrooms beautifully.
Step 7
Remove from heat and squeeze fresh lime juice over the mushrooms.
Step 8
Garnish with cilantro and serve with warm tortillas, rice, or in a burrito bowl.
