Ingredients
2 large roasted red bell peppers (about 300 g), drained
1 cup (100 g) walnuts
1/2 cup (50 g) breadcrumbs
2 cloves garlic
2 tbsp pomegranate molasses
1 tbsp lemon juice
1 tsp ground cumin
1/2 tsp smoked paprika
1/4 tsp chili flakes (optional)
3 tbsp extra virgin olive oil
Salt and black pepper to taste
For Garnish
Chopped walnuts
Pomegranate seeds
Fresh parsley
Extra virgin olive oil
Preparation
Toast the walnuts in a dry skillet for 3–4 minutes until fragrant. Let cool slightly.
Add the roasted peppers, walnuts, breadcrumbs, garlic, pomegranate molasses, lemon juice, cumin, paprika, chili flakes, olive oil, salt, and pepper to a food processor.
Blend until smooth but slightly textured. Adjust seasoning if needed.
Transfer to a serving bowl and chill for 15–20 minutes to allow the flavors to develop.
Drizzle with olive oil and garnish with chopped walnuts, parsley, and pomegranate seeds before serving.
